What to serve with salmon?

I have a couple lovely salmon fillets for dinner tonight from the farmers market - can't decide what to do with them but want to use the elftovers for salmon pasta tomorrow. Any ideas for salmon, and what should i serve with it?

    I do a lot of teriyaki salmon served over brown rice (I usually toss the rice with a small amount of slivered almonds and a tiny drizzle of sesame oil) and steamed asparagus - one of my staple dinners!

    When I eat fish for dinner I usually have a nice healthy plateful of Spinach :-)

    Here's a honey-soy salmon recipe I enjoy. I serve it with brown rice and a zucchini/tomato saute, or you could do red or gold peppers and zucchini too.

    1 scallion, minced
    2 tablespoons reduced-sodium soy sauce
    1 tablespoon rice vinegar
    1 tablespoon honey
    1 teaspoon minced fresh ginger
    1 pound center-cut salmon fillet, skinned and cut into 4 portions
    1 teaspoon toasted sesame seeds


    Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved. Place salmon in a sealable plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes. Reserve the remaining sauce.
    Preheat broiler. Line a small baking pan with foil and coat with cooking spray.
    Transfer the salmon to the pan, skinned-side down. (Discard the marinade.) Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes. Drizzle with the reserved sauce and garnish with sesame seeds.

    To toast sesame seeds, heat a small dry skillet over low heat. Add seeds and stir constantly, until golden and fragrant, about 2 minutes. Transfer to a small bowl and let cool.

    Runner beans go very well with salmon, a few new potatoes (if you're not carb shy) carrots, mushrooms?

    The honey soy sounds amazing, might try that next time I get salmon.

    I am having salmon tonight as well. I am trying out this recipe and will be serving it with edamame and quinoa or cous cous.

    Mustard- and Brown Sugar- Rubbed Salmon
    2 servings

    Ingredients
    1 tbsp dark brown sugar
    3/4 tsp salt
    1/2 tsp freshly ground black pepper
    1/4 tsp ground cumin
    1/4 tsp mustard powder
    2 salmon fillets (6 oz each), skin removed
    1/2 tsp olive oil

    Directions
    1. Stir together sugar, salt, pepper, cumin, and mustard in small bowl. Unwrap fish and leave it on paper you bought it in, placing it so side that had skin is down. Press sugar mixture evenly onto fish.
    2. Heat oil in large nonstick or cast-iron skillet over medium heat. When hot, place fish rub-side down in pan. Cook until rub dissolves and darkens slightly (being careful not to burn), about 4 minutes. Flip fish and cook to medium doneness, about 1 minute.

    Sometimes when I made salmon I like to mix some olive oil with spices (garlic, basil, parsley, dill, etc) and I put in on the salmon and cook for about 15 mins. on 350 - 400. Quick, tasty and low cal :)

    Last time I did salmon, I did it very simple.

    I did 1 tbsp of butter with some lemon juice in the skillet. I let that get hot them cooked the salmon steaks. I served with steamed asparagus. I loved it.

    salmon tonight here as well =] (broiled)

    i like roasted veggies / asparagus .. or a salad.
    maybe some bulgur wheat on the side too.. or brown rice
