For the shoulder, ermm.. I normally do Barbell raise or shoulder press. you can use dumbbell too.
for the back, I go for superman or pullup.0 -
If you are new to weight lifting and are going to do seated press, shoulder press, start out with light weight dumbbells. Work your way up using the dumbbells.0

It's hard to beat overhead pressing movements for shoulders: Military press, push press, seated presses, arnold presses, kettlebell presses, etc.
For back and upper back: deadlifting hits a bunch of stuff up there. All rowing movements and vertical pulling movements: dumbbell, barbell, t-bar rows, etc & pull ups, chin ups, lat pull downs, etc.
To be honest a properly structured beginners lifting routine will have enough intelligently programmed compound lifts that hit most things. Check out something like NROL, Starting Strength, Stronglifts or All Pro's Simple Beginner's Routine.
One you've got your chops on one of these routines (say 3-6 months) then you can branch out and explore other stuff on the base you've built (i.e. specialise in muscle gain, power development, absolute strength, etc)

Back: deadlifts, lat pull downs, seated rows, bent over rows, single arm cable rows, V-bar rows, T bar rows
Shoulders: barbell overhead press, dumbbell overhead press, front raises, side raises, bent over side raises, upright rows.
I don't know where your strength is at now, but always start light and perfect your form before going heavier!0 -

Backs and shoulders:
Deadlift, shoulder press, lateral raise, upright row, rear delt raise, standing shrug, EZ bar row, one arm rows, dubmbell pull over (for them lats)..
It think we have all hit on all the ones for you to research on and try out your form, and build a nice back and shoulders.0
