June 1 I was 191 pounds then as of this past Monday I was 196.8 pounds. As of today I weigh 195 pounds. I started in January as 203 pounds but started fresh this past June as 191 pounds so I logged that as my starting weight. Good???

Personally, I don't see ever changing my starting weight away from my highest weight. It's a reminder of where I've been. It also just so happens that I did start MFP while I was at my heaviest weight.
But remember, this is for you, not anyone else. If 191 is where you want to start for whatever reason (because it's what you were at when you started MFP?), there's nothing wrong with that.0
