Blueberry Lemon 40 cal pancake bites

Makes 24 'bites'
200g blueberries
200g self-raising flour
4 egg whites
1 lemon
1 tsp baking powder
200g fat free Greek yoghurt
1 cup Splenda (or other sugar substitute)
1 cal cooking spray- about 30 sprays
In a bowl, crush the blueberries with a fork, then combine with the yoghurt, flour, lemon zest+juice, baking powder and splenda. It should form a thick batter.
In a separate clean bowl, whisk the egg whites until thick and fluffy (meringue like consistency).
Gently stir the egg whites through the batter, 1/4 of the egg whites at a time.
Spray two 12 hole muffin pans with 15 sprays of cooking spray each (use more or less depending on how non stick your pans are).
Spoon about 1 tablespoon into each hole, bake at gas mark 5 for 20-25 minutes until golden on top.
Per 'bite': 42 calories.
These look like mini muffins, and have the texture of pancakes. I sometimes have 3 or 4 with some yoghurt and fresh fruit for breakfast, they are great hot or cold!
