Reducing Calories After A Plateau

I was stuck at the same weight for about a month and a half. I decided to take the advice on the forum to eat more instead of less and that seemed to finally get me out of a plateau. So here's my question. Can I go back to 2 pounds a week deficit for a while or will my body go right back into a steady weight? I wish it was as simple as 500 less calories a day = 1 pound a week but unfortunately I don't think it's as easy as that. I didn't start losing again until I ate 500 MORE calories a day.
I know people are going to say what's the rush but I still have probably 30-40 pounds to go before I can start working on building muscle and at 3 to 4 pounds a month you're talking close to a year. Anyone have experience with creating a bigger deficit after a plateau?
