Made this on a whim and it turned out just too yummy not to share. This would be great for a lunch at work, a picnic or just diner on a hectic day....
INGREDIENTS:
-1 small avocado
-1/2 cup non-fat yogurt plain (greek yogurt is okay too
-1 cup of pico de gallo (pre-made from the grocery store, I used medium for a little kick, but that is up too your taste -keep in mind that this will get a little "warmer" as it sits)
-1-2 tsp of Mrs Dash salt-free southwest chipotle seasoning
-a dash of salt, if needed
-about10-12 oz of pre-cooked boneless skinless chicken breast (I used left over grilled chicken breast, but canned, the pre-cooked one in the bags or left over rotissery chicken should work too)
HOW TO:
- cut avocado in half, scoop out the "good" stuff, mash it up with a fork
- mix in the yogurt until it is very smooth
- add the pico de gallo, trying not to get too much juice
- add the southwest chipotle seasoning (try one teaspoon first and taste to make sure it is not to warm for your taste)
- add salt, if needed
- finally add the finely chopped chicken

Keep in refriderator -please note that avocados change color with time when they are exposed to air (even in a sealed container). They do taste just fine, but that pretty green turns a little grayish:-(. I suggest to use this up within 2 days ;-)

This makes enough for about 4 portions and the calories are dependant on your actual ingredients (amount and kind of chicken/size of avocado).Mine ended up at 160 calories a portion.

ENJOY!!!!
