Fresh herbs

I planted a herb garden this year and I guess I have a green thumb. It's growing like mad! I thought it would help me eat less sodium since I can use them for flavour. But I have so much! I'm going to store some of the (freeze or dried) but any ideas on how o use up large amounts of herbs? What are your favorite ways to use them.

    Depends on what herbs you have! I tend to take my excess of herbs and freeze them in olive oil in an ice cube tray to use later, but for some, like parsley, I can easily use it up in a pesto sauce or something.

    I dehydrate a lot!! I'll take basil, sage, marjoram, chives and oregano and dry huge batches for an italian mix. We used it all winter long and I gave away tons of the mix in pretty jars at Christmas time along with other dehydrated herbs. Don't crush them all the way though if you dehydrate when putting jars. Keep them in larger pieces and then crush when putting in your foods.

    I have thyme, lemon thyme, parsley, basil, purple basil, chives, oregano, dill, fennel, orange mint and chocolate mint :)

    Thanks for this thread, I've seen them done in ice trays but not with oil, I think that's a great idea! You could do your own jar of dires mixed herbs too, just make sure they're thoroughly dried in a VERY low oven.

    knew it!

    I use fresh basil all the time. goes well in soups, on pizza, in curries.

    oregano / basil / thyme / majorum are pretty much good on everything.

    pesto, usual basil but can be anything, you can use lots of different herbs in soups, mint tea, a coriander curry, parsley in a greek salad, a herb crust on meat and fish, just get into the habit of herbing meals up, doesnt have to be a lot but it keeps the herbs tasting good, even if you dont use the herbs still keep taking the biggest leaves off as these are not so tasty and it encourages new growth, hope this helps xx

    I like herbs chopped in an omelette (especially chervil and chives). Some are also nice in salads.
