Does eating too few or too many calories really mess up your metabolism?

well eating more calories increases your BMR. Same way for the too low of calories. This has to be over a certain duration of time.

Someone else will have better info, I'm sure, but only if you take things to an extreme do you need to be concerned. Massively undereating will mean your body is pulling energy from muscle as it can only burn through so much fat in a specific period of time. Undereating can also cause other issues, like hair loss, brittle nails, and other health issues.
Follow the calorie goal as given by MFP - I try to stay within 50 calories - and you'll be fine

If you're trying to ask about starvation mode, no, it doesn't really exist.
Your body doesn't have an on/off switch for efficiency.
What does happen is, as calories get low, you'll move less and less, and do less activity. So then your calories burned will go down.0
