    So happy I found this thread! Am craving pizza and was searching for a good recipe. I have celiacs disease, so no flour for this girl....

    fwiw: I also love polenta pizza crusts (for the non-carb conscious eaters). Tasty!

    Its so yummy! But i LOVE veggies ;) to help with the consistency some i add a bit of cheese and wheat flour with whatever veggie- not much but just enough to help hold it together!

    The zucchini one calls for a bit of almond meal, I didn't have that so I ground up some flax seeds and used that. Between that, and the egg, and a tiny bit of cheese it stayed together really well.

    Polenta crust !!! Oh my, never thought of that........ So many good recipes, I'm going to have to try them all!!!!!

    When I've done the cauliflower crust, I use my juicer to remove all the liquid (fyi don't drink the juice it tastes kinda like vomit). It leaves the pulp ultra dry for making the crust.

    @shan11180 - we suspect celiac in one of my children....We have made coconut flour crust pizza that was outstanding! There are a few recipes online.

    Coconut flour??? Where do you buy all these unique flours?? I shop mainly at Aldi's

    I haven't checked Aldi's yet. I get mine from SAMs, but it's becoming easier to find in health food stores and sections. It is not carb free, but I tolerate small amounts is a morning muffin. Be sure to read up if you try it - it is not equally substitutable for wheat. The pizza crust was excellent! Slightly cakier texture than a traditional crust but very good. I found it a little less labor intensive than the cauliflower crusts, but again it will have a few more carbs.

    Its actually good. I have made one from zucchini also and I preferred that one. The trick with them both is that you must get as much of the water out as possible.
