Ideas please, dressing up those veggies?

So since I was a kid I have always had a disdain for vegetables. My parent's didn't do a lot of cooking with fresh veggies and those I did eat were out of a can (but that's another story for another day). I have increased my veggie intake over the years but whenever I'm trying to eat healthy for the sake of losing weight I start to get burned out eating them.
I usually roast or steam them and then add some butter/seasonings. I've done the stirfry thing and now I can't do that too often or I'm not interested. I got food poisoning from a salad I ate at a fast food place many years ago. I'll eat them but only on occasion.
So, I am asking if any of you guys know of other ways to cook them or make them a little more interesting.

Avoiding salad because you got sick once is silly. Prepare your own. Combinations of raw and cooked vegies are awesome. Add your protein, beans, quinoa/rice/pasta etc to bulk them up and make them more of a meal. Use olive oils, nuts and seeds, avo, olives, cheese etc for fat. So many combos!
Use different spices and herbs on your vegies. Try bulking up curries/bolognese/casserole with vegies. Make soup. Incorporate greens in to smoothies. Vegie frittata. Make vegie "noodles"0 -
We have lemon juice in a spray bottle. A few squirts of lemon juice really tastes great on veggies. It also taste great on chicken, pork, and fish. On top of that, sprinkle some Greek seasoning0

Cook with coconut oil and sear ten a little to carmelize the natural carb content0 -
I buy bottled sauces like satay and use over steamed veg. I like the French dressing and Italian dressing ones too.
Make a dressing with soy, sesame oil and French dressing which is lovely.
Sometimes good old gravy.
Also love lemon or lime with pepper.0 -
Some of my simple veggie faves:
Boiled beets, cut in wedges, dressed with lemon juice, olive oil, fresh chopped dill, fresh squeezed lemon juice, salt and pepper.
Brussels sprouts, halved or quarter, sautéed in olive oil butter combo, dressed with orange zest and a touch of fresh squeezed orange juice, salt and pepper.
Kale chopped lightly sautéed with a ton of fresh chopped garlic, chile flakes, salt and pepper and all sprinkled with nutritional yeast (careful not to burn the garlic).
I second making salads with mixed grilled and raw veggies. Butter lettuce or a rocket spring mix, roasted grapes, and or small chunks of sautéed soft sweet potato, fried haloumi cheese and a touch of chopped walnuts, dress with a small dash of oil/vinegar, maybe add som green apple chunks or raw red onions to balance the rich nuts and cheese. This is a rich, potentially very fatty salad, but so good for a meal.0 -
I like to add them into my dishes, not usually eat on the side. Think meatloaf, meatballs, nuggets, burgers with shredded veggies in them. Any one pot meal like soup, stew, casseroles, chili can have veggies added, stir fries, or try things like buffalo cauliflower or spiralized vegetables (www.inspiralized.com).
If I do eat them on the side they're usually roasted - then I use leftovers to make "hash" and top with a runny egg.0
