Prepare Ahead Lunch Box Ideas

Hey guys!

I'm sure there are other threads similar to this but I can't find what I'm looking for! I've been wanting to try some prepare ahead lunch ideas but can't find anything that isn't 300+ calories. I'm considering making black bean wraps and freezing them but am unsure of any good recipes for them. I want to do more then one item per day and be able to mix and match main parts (i.e, the burrito). So like, a black bean wrap and one or two under 100 calorie sides. The thing is, I keep my calories very low for lunch so it's proving difficult to find anything.

Any suggestions?

    Overnight oats. Can have pretty much as many calories as you want.

    Salad bar. I prep veggies, take out a few bowls, add a chicken breast.

    There is a good Bento thread going, but I don't think all are such low calorie. I have a two-tier collapsable lunchbox. It's huge though, so yeech. Anyway, I'll put a nice healthy salad in the bottom, with a small bottle [came a different bento] of dressing [35 cal/two tablespoon - Newman's Own Sesame Ginger! Sooo good]. In the top area, there are three small boxes on top of the cooler pack. In the large one, I'll put rice. In the first small one, a topping for said rice [usually Ozuke]. Sometimes I'll leave the third empty, or fill it with topping for the salad that I would like hot, such as those morning star fake bacon as crumbles. Can microwave separately!

    Sorry to double post. Second idea - Shirataki noodles.

    Shirataki noodles can be bought at even your local Wal-mart, near the tofu. They are made either with Tofu or Yam... And are 0-20 calories for the entire package, depending on which you get. They are shaped like fettuccine, angel hair pasta, or spaghetti. The 'plain' just makes me think of spaghetti still.

    Drain them from package, as they are stored in a liquid. Rinse. Pat dry; do NOT boil these, they get sooo watery. Throw in hot pan to dry them out just a lil more OR to stir fry.

    Stir fry; you just need a dash of the cooking sprays for this. Oil the pan [sprays = less oil used, so I'm more comfortable. Only a few calories]. Chop up some shallot [negligable calories, very little needed], heat with pan. Throw noodles in when pan is ready. Stir occasionally to help evenly distribute heat & shallot. So far, 20-30 calories max. Now, add in an egg [60-100 calories], scrambling it with the noodles. Add a little your favored sauce, stirring until done - I like House of Tsang's Bankok Peanut Sauce. 40 Cal per tablespoon, and sooooooo good with these noodles. Noodles will stick together a lil though, so be careful in stirring and distributing the items.

    BAM. You still have enough calories left for some veggie on the side, etc.

    So I that bento thread really caught my attention. That is an amazing idea! I may or may not have purchased a Bento box online last night so we'll see where this goes! :)

    If you google low calorie make ahead lunches there are hundreds of ideas out there. Some are mason jar salads, wraps, etc. One side that I found and is very easy is a Very Berry Salad. It's a pound of strawberries, 6 oz blueberries, and 6 oz raspberries. The dressing is 1/4 cup sugar and 2 Tablespoons basalmic vinegar. It makes 8 servings and is 57 calories per serving. You can also make a chopped salad with various veggies that will be very low in calories as well.
