What Else To Do With Spaghetti Squash

I love spaghetti squash and usually eat it like pasta (with sauce and parmesan cheese) but I wondered if anyone had ideas for incorporating it in other dishes.

I love to roast it then mix it with shredded carrots and some thinly sliced sweet onion and toss it with a good vinaigrette.

Try mixing it in with waffle batter. I did this with butternut squash and it was godly.

You can cook it, pull it into threads then cook it like hashbrowns in a little healthy oil. You can add it to soups. Don't cook it in the soup it will get mushy. You can use it in salads or slaw.

chicken curry soup I used quorn "chicken tenders" and subbed spaghetti squash for noodles added peas, roasted red pepper, halved the coconut milk. added fresh cilantro. It's a win for 366 calories for 3 servings. It was so good.

Eat it with butter and a little black pepper. That's really all I need. I love spaghetti squash!

Breakfast: throw some (already cooked) in a pan with some olive oil, cook for a bit, stir in some spinach to wilt it, add a clove of minced garlic, let it all cook for a bit, then top with a fried/poached egg and some Parmesan cheese. Ham or bacon is optional but yummy. Veg for breakfast = win.
