Mexican Corn Salad

in Recipes
3 tbsp butter
5 ears of corn, kernels removed
1 jalapeño seeded and finely chopped
1 garlic clove, grated
2 green onions
3 tbsp light mayo
Juice from 1/2 lime
Handful cilantro
2 tbsp cotija or feta
Chili powder to taste
Melt butter in skillet then add corn. Cook until lightly charred, approx 6-10 minutes. Add jalapeño and saute slightly, remove from heat. Mix with all other ingredients except feta. Garnish with feta. Original recipe said to serve warm or at room temperature but I prefer cold. Delicious!

Cold? I know a lotta mexicans and I don't know a single one who would eat corn cold. Or with feta. Just sayin'.

As I said, the original recipe calls for it to be warm, but I prefer it cold.
I substituted feta for cotija cheese since its impossible to find in my grocery store0 -

hi chock. sometimes i love it when your pic is a big swirl of white chocolate. sometimes I hate it.

I've made this before by "roasting" the corn on a sheet pan under the broiler - careful, it burns quickly. No butter needed unless you prefer it for flavor. It's still great without it. And I agree, feta is an acceptable sub for cotija in a pinch/when unavailable.
I think it's hilarious that people feel the need to chime in ONLY to criticize, just sayin'...

No I just thought the butter was a mistake and agreed with choc. not cause butter is evil, but because when i cook that amount of corn it doesn't take that much butter. but maybe for this recipe it does. maybe it mixes with other ingredients to form a sauce of some kind. so just clarifying.0 -

When I think of "healthy" corn is really not the first thing that comes to mind.
Half of it is completely indigestible, which is why you see it shortly after consuming it.0 -
