I tend to continue eating even though I am full. Like that cereal before bed, or granola bar, or chocolate....

Keep food out of sight, that tends to work well for me. Also put food into a dish and only eat that and put the package away. A smaller portion on a smaller plate looks like more food to your brain than a smaller portion on a large plate. When I think I'm hungry or just want to eat, I force myself to drink a full glass of water and wait a bit. Usually my want to eat goes away. I also quit eating (and brush my teeth) an hour before I want to go to bed which helps prevent eating right before bed. Chewing gum can help as well.

I chew gum and try to distract myself with an activity because it usually means I am bored. Also I agree with the smaller portion on a smaller plate, I have started doing that because even when I am full I tend to finish whats on my plate so I have to serve myself less :)

Been there done that. I still have days where I want to keep eating even when I know I have had enough physically. This is a psychological problem. You are looking to fill an empty "space" in your emotions with physical comfort.

So the trick is to recognize that the discomfort you feel will not be fixed with more food and will in fact become a more uncomfortable feeling of disappointment in yourself if you continue to try to go that route. You need to learn to be okay with that uncomfortable feeling without giving in to the need to "fill it" with food, and you need to start meditating on what exactly is creating this feeling. Then you can start working on filling it properly and in a healthy way.
