Farm Fresh Protein Calorie Counting

Need some help - We own a farm and raise our own proteins so no labels showing calories for me to use to count intake. Anyone have a good rule of thumb for caloric values per oz. for beef, chicken, pork etc... when it's farm fresh?

this. There isn't some sort of extra bonus for not coming out of a syranwrap package from ShopRite.
