First time posting, 73 days and 19 lbs down, BUT I just fell off the wagon and it ran over me.

Let me preface by saying that I'm taking 12 credit hours in 12 weeks this summer and have been doing well so far, Until my husband got Gout, our cat got sick and I'm so stressed I can't sleep.
So how do you log that nearly 3k calorie day and keep going?

Exactly as you put it.. Log it and keep going. Life gets in the way, and there's nothing you can do but acknowledge it and move on. By dwelling on it, especially when you clearly have other stressful factors occurring, you will do nothing but hinder your mindset. You got this!0

It's literally only one day. At most you might now lose weight this week. Big deal. There's still next week and the week after...0 -

Sometimes this will happen, you can mentally prepare for it so you know it's coming, and put it behind you and keep up the regular routine, for instance, my son's birthday, we went to buffalo wild wings, I had a 2,500 cal dinner (ouch!), but continued on my regular routine of keeping .y calories in check and exercising, and didn't beat myself up over it. You'll be fine, just know every once in awhile it's going to happen.0
