Healthy Fried Chicken???

My family eats A LOT of chicken. At some point many years ago, we decided to start buying/cooking only boneless, skinless chicken breast. The thing is... we love fried chicken. The problem was: traditional/semi-traditional fried chicken requires a half a pan full of nasty grease/oil. After a few trials, I found out that just a couple tablespoons of olive oil works just fine for boneless, skinless chicken. If you don't want breaded chicken, partially freeze the chicken and try cooking it with one tablespoon olive oil and about a quarter cup of water. put a lid over it and let its own juices do their job. Just make sure you keep an eye on it and check it ever ten minutes about or it'll dry out on you... That's usually how I make it stove top...
