    Maple Pecan Cupcakes
    (Not sure who created this - otherwise I would acknowledge them here.)

    For the cupcakes:

    1/2 cup coconut flour
    1 Tbsp. arrowroot powder
    1/4 tsp. sea salt
    1/2 tsp. baking soda
    4 eggs
    1/2 cup grade B maple syrup
    1 Tbsp. vanilla extract

    For the frosting:

    1 cup heavy whipping cream
    1 1/2 Tbsp. maple syrup
    1/2 tsp. vanilla extract
    1/3 c. pecan pieces

    Instructions:

    1. Preheat oven to 350 degrees.
    2. Stuff 8 muffin cups with liners.
    3. Combine all the cupcake ingredients, beating for about 2 minutes. Spoon into the cupcake liners and bake about 20 minutes or until a toothpick comes out clean when you check the cupcakes. Cool in pan for about an hour.
    4. Whip all frosting ingredients except for pecan pieces. Spoon onto cupcakes and sprinkle pecans on top.

    As a former bread baker, I hear you! When I started eating lower-carb, I concentrated on learning how to prepare tasty new (to me!) meat entrees (several favorites are from Julia Child's French Cooking). I invested in some good cookware (not totally necessary), and now I really get a kick out of cooking completely from scratch, something that took a backseat when I had kids at home (but I could have and should have done it anyway!).

    I love to bake as well. Fortunately I have a large family so I always have someone to give it to. Usually I get requests from family members. Just made my mom a Key Lime pie.

    I agree - bumping for later - however bake and give away - it satisfies your baking passion and then you dont' have it hanging around. Bring it to work, your hair stylist, even check-in with neighbors or senior centers to see if they would enjoy your goodies!

    If you have a cat or dog, you can make them treats. That's fun. Also, Ellie Krieger has some great baking recipes. Her Banana Bread and Zucchini Bread are amazing.

    As the recipe is, it is a little higher in calories, but I used PB2 instead of peanut butter (could cut it out all together) and I cut the sugar to 3/4 cup (could use sugar substitute). They were absolutely amazing. I felt totally guilty for eating them, but they weren't bad calorie-wise.

    Search the internet for Almond Flour and Coconut Flour recipes. If you like the results, buy your flour in bulk to cut your costs. Almond Flour Bread is amazing by itself, but top it with ricotta cheese, honey drizzle and lemon zest or peanut butter and fruit and it's amazing. Low carb, low sugar, gluten free.

    I love baking too. My daughter is allergic to eggs and all nuts and is sensitive to dairy so that has made baking even more fun/challenging. I actually bake alot of vegan goodies now since they are already tried and true recipes that contain no egg. If I'm not using a vegan recipe, I just replace the eggs with ground flax seed. 1TBS mixed with 3 TBS water. Let it sit until gluey and mix in just like an egg. Flax seeds are great! You can replace oil with applesauce or other mashed fruit. I learned alot of tricks reading about vegan recipes and substitutions. I add whole wheat flour in with the all purpose sometimes. But a dessert is a dessert! It's supposed to be a treat. If I want cheesecake or a big layer cake I bake it to take over to a family dinner or party where it will get eaten. I have no self control. A whole cake left in my house will get eaten, by me...lol

    Go gluten-free and start exploring non-American desserts. I just made some Besan Laddu last night, which is basically an Indian no-bake cookie made with chick pea flour. Yummy, low calorie, extremely low sodium, and chock full of nutrients.

    You could also explore other kinds of cooking. That's what I've done. I found when I make things from scratch using choice ingredients, I cut out a lot of the sugar, bad fats, and calories. Made an Irish lamb stew tonight that was less than 400 calories for a 2.5 cup serving, with about 450 mgs of sodium. It can be done. Explore your culinary options!
