Picnic?

We're planning a hike and a picnic on July 4th. I like the idea because at least I'll have control over what I pack, unfortunately I've been in a food rut and nothing really sounds appealing, sandwiches typically don't fill me up, I don't like canned tuna, so I have absolutely no idea what to pack.

Any ideas? We can use one of the kids' lunchbox to keep stuff relatively cool but it can't be huge as we only have one lunchbox that's decent. I may or may not still be in my 'starving all day' days as well...

If you're not into sandwiches maybe some sort of "bowl" with quina or brown rice, with diced cucumber, tomato, feta cheese, zucchini, maybe some diced chicken or turkey, and a dressing of choice.

Someone posted a similar thread yesterday, here were some of my suggestions:

What's your favorite food to eat at a picnic?
We decided every Sunday we are going to have a picnic but are stuck on food ideas. It has to be something that tastes good cold. Kid friendly and I don't care about the calories.

We go to a regular event in the summer time at the botanical gardens where we bring picnic food and booze - love it! Sandwiches are obviously the easiest thing, but I get a little bored with that, to be honest. Sometimes I pack sandwiches for the kids and then something more fun for husband and I. Here are some of the things we bring:

    Cheese, Crackers, Salami/Proscuitto
    Hummus and Pita Chips
Fried Chicken (we often pick this up a day ahead of time because while I like hot chicken, and cold chicken, I don't like barely warm fried chicken...). When I do that I usually get a pack of chicken tenders for the kids. I don't eat coleslaw but husband does so we get that sometimes too.

Corn and Black Bean Salad: http://www.onceuponachef.com/2010/08/black-bean-salad-with-corn-red-peppers-avocado-lime-cilantro-vinaigrette.html

I always bring fruit and something fun for dessert.

Sometimes I do sandwiches but get pretzel slider buns, roast beef, cheddar and horseradish sauce instead of my normal turkey and swiss on sliced wheat sandwich bread...

Cold bottle of white wine and plastic wine tumblers....

    Blanket, bug spray, sunscreen!

    Have fun!

That event that I was referring to is tomorrow night and I was just thinking today that I needed to look back through the thread and find some of the ideas to see what I want to bring... only it is supposed to rain all day tomorrow. Womp Womp.

Protein shakes, protein bars, cheese and nuts, fruits! I always pack a lunch box (weekdays and weekends, no matter where I go), and these are my go-to's! Also, check out the Pack It lunchbox on Amazon - it has freezer packs built in so they don't take up space or make food soggy...great for camping and hiking!
