How should I eat on my off days?

Hi so I'm bulking, but I'm having a very hard time meeting my maintenance goal on my off days. On the days that I workout I'll eat a calorie surplus of 500. But on my off days I'll have trouble even reaching 2000 sometimes. I work from 1-11 so I can normally get in two meals or so and after work i'm not normally hungry. Will this hurt me at all?

I workout on my days off so that's how I'm able to eat so much then. I just don't want to keep doing what i'm doing and start seeing very minimal results. The last time I worked out my max only went up by a pound or so depending on the exercise.

During my days off, I normally spent my two hours on the gym then do all the cooking (healthy foods) for that day.
