Meeting Macros

I am just getting started with MFP and have had some trouble meeting my macros over my first couple of days. I tend to be over on carbs and under on protein and fat. I am not one of those people that is eating low fat diet food so I am sort of at a loss as to how my fat is coming in under. I can understand the protein because I eat very little meat. I was a vegetarian for a number of years but now I eat meat maybe 2-3 times a week now.

I am wondering if someone would let me look at their diary to see a couple of examples of what they ate to meet their macros. In addition feel free to look at my diary and give suggestions.
