Plant based eaters

I'm focusing on a more plant based lifestyle and as I get paid this week and off work next week, I'm going to have a massive shop and bulk cooking session.

What are some food staples I need?
What are some of your favourite plant-based meals? (include breakfast, lunch and dinner, or whatever really)

No need to scrimp on calories as I'm struggling to maintain (keep going under) these days :)

    I'll assume you are coming from a standard american diet and need a few substitutes for meat, as well as including more fruits and vegetables to your meals. You will want to have healthy snacks on hand and even a few frozen dinners just in case you run out of fresh food.

    So from a transitional point of view, Food staples:
    Your favourite grains: Rice, pasta, bread, breakfast cereal
    Meat substitutes: beans (black, kidney), chickpeas, brown lentils, tofu (flavoured is nice)
    Veggies: broccoli, mushrooms, zucchini, tomatoes, lettuce, carrot, celery, onion, garlic
    Fruit: apples, oranges, bananas, blueberries, dried apricots

    For breakfast have cereal and milk and fruit, or toast and peanut butter, or a smoothie
    For lunch have a hummus and vegetable wrap, or 3 bean salad and some nuts
    Dinner rice and beans, etc

    Make lentil vegetable lasagne and freeze portions
    Snack on fruit and nuts
