New favorite meal with new healthy eating habits?

What are some new recipes you have tried and now love to make?

I love a good spinach salad with feta cheese, walnuts or pecans, raisins or apples, and hard boiled eggs- very filling, high fiber and high protein (not to mention very easy to throw together).

Another things is now that my husband has gone vegetarian I have been making meatless meals and I like veggie rice wraps- saute some mushrooms, green onions and bell pepper with some cumin and garlic, after that is soft add a couple of cups of cooked brown rice, a can of corn and a can of kidney beans- put some on a soft tortilla shell and add what you like- salsa, sour cream and a bit of cheese.

    Spaghetti Squash with a home made meat sauce. It's so filling, and so low calorie- especially with the 96% lean ground beef. We sprinkle some parmesan on it.
