Had a great weekend...how do you make up your calories??

Ok so a friend of mine had a party over the weekend and I had a really good time...in fact too good of a time lol. Between the drinks, food, and hangover food the next day I would say I went over like 3,000 calories over the weekend!!! Yikes!!! Now my question to everyone is....how do you usually make up for the weekends? Now I have an exercise/calorie deficit to make up for this week that isn't going to be painstakingly hard to achieve (I need to burn 500 calories a day)...however, it makes my net calories (once exercise is factored in) for under 1200 calories on most days...I don't want to eat back my exercise calories for the simple fact that I already did over the weekend
I don't believe in starving yourself to lose weight so please don't send me advice that my body will go into starvation mode blah blah blah. I totally get that and trust me, if you haven't seen my sentence above...obviously I don't have an issue with getting enough calories in LOL. I know some people go by weekly calories instead of daily so I am wondering if I should be applying this methodology for this week so my day at the scale isn't so horrific? Any thoughts??
