veggie prep

How do you like to prep you veggies for lunches? On Sunday or Monday I prep my lunches for the rest of the week, I usually grill some asparagus or broccoli to go with whatever....but am wondering what everyone else does? Cook it? Steam it? Put it in raw with some dip on the side? I love my grilled stuff but sometimes by Friday....it's a little limp. I hate that.

    I eat mostly raw vegetables (snap peas, cucumber salad, bell pepper strips) for lunches. If I want hot food, I usually opt for soup. I made minestrone a few weeks ago. I made a 2 gallon batch, and was still pleased with the texture of most of the vegetables by the end of the batch.

    I usually cook the vegetables when I'm making dinner the night before or (ideally) when I'm making breakfast and then add them to the pre-made meat and (usually) starch. Like this morning I panfried some green beans, mushrooms, and cabbage to add to my container of turkey breast and sweet potatoes.

    My most common ways of cooking vegetables for lunches is probably roasting, though. I do more raw veggies in the summer.

    I Like the salads in a mason jar. I can make them on Sunday and they are still good on Friday. Googling pulls up a ton of ideas.
