Hi!
I am looking for some new kid friendly dinner recipes. I have picky eaters at home and I WILL NOT cook double. I'm also crazy busy and don't like cooking to begin with. Please share your yummy healthy recipes with me! Bonus if it's freezer friendly! Thanks All!

homemade tomato soup.
2 tbsp veg oil
1/2 medium onion, diced
1 celery stalk, diced
1 carrot, diced
3 cloves garlic, diced
4 cups low fat/low sodium chicken or vegetable broth
2.5 pounds tomato, cored and chopped
Salt/Pepper
1 tbsp fresh basil
in a large sauce pot, preheat the oil on medium high. Saute the onions till soft (3 or 4 minutes). Add the cel and carrots and continue to saute till tender. Add broth and tomato. Bring to a boil then cover and roll back to a simmer and let it go for about 20 minutes. Near the end, add the basil and season to taste. Use an immersion blender to blend it up. If you don't have an immersion blender, you can use a regular blender but realize that hot liquids and blenders can be a bad combo - small batches and cover the lid with a towel and hold it down. Garnish with some extra basil or slice of green onion or some chopped chives.
You wanna kick it up? roast the tomatoes and garlic first and caramelize the onions (true caramelized onions take a good hour on low heat).
You wanna fatten it up? add a pat or two of real butter at the end or some cream when you blend it. That will give it a real pro touch, but, you know, fat. So your choice. I just had a bowl without the added fat and it was lovely.
You want it silky smooth - pass the soup through an fine metal strainer after blending.
My kids love this.
