Gluten Free yummy snacks and dinners?

if you're GF or have any yummy recipes please share! I've recently decided to do gluten free(although there are a few snacks left in the cupboard that I indulge in here and there Til they are gone) and I need snack and dinner/lunch ideas for me my husband and my toddler!

Nuts, veggies, fruits, meats (deli, pepperoni, etc, cheese, left overs, dried fruit, Lara bars, smoothies, coconut flour muffins, eggs (hard boiled, fritatta). Most foods are gluten free... Rice, spaghetti squash instead of noodles, corn bread, Chex cereal, potato...
Once you've been GF for a while it gets easy. At first all you think about is what you CAN'T have. You'll get there.

I'm not celiac, but I try to avoid most foods that make my blood sugar spike and that includes most breads.

I'm not sure which other countries do them but here in the UK we have these crisp type things called Pom Bears - they're gluten free as they're potato snacks and average at 95 cals a pack0

I definitely recommend glutenfreeonashoestring and glutenfreegoddess. Lots of regular recipes you always make can just be modified to be gluten free as well. I have Celiac's, but I eat spaghetti w/meat sauce (quinoa noodles), pulled pork, etc all the time.
For snacks, I'm a big fan of fruit, veggies, Kind bars, popcorn, etc.0
