I have a recipe for "protein pancakes" -- cottage cheese, egg beaters & oatmeal, with a little sweetening thrown in. I wanted them for breakfast today, but didn't feel like making them last night, so I took the ingredients & did something different--
I baked it!
1/2 cup (40g) quaker oats -- 150 cal
1/2 cup (113 g) fat free cottage cheese -- 80 or 90 cal, depends on your brand
1/2 cup (122g) egg beaters--60 cal
1/2 tsp baking powder
splenda to taste (usually 1/4 cup, about 20 cal)
cinnamon or other spices to taste

Usual recipe-- mix with hand blender, cook in a pan like pancakes. I didn't feel like doing that, so I took a 2 cup corning ware bowl, sprayed it with pam, & popped it into my toaster oven for about 40 minutes @ 425, then stuck it in the fridge to bring to work. Had half of it for breakfast this morning (heated up in the microwave) & am saving the other half for tomorrow.
You could also add fruit or cocoa powder if you like.

You can eat the whole thing for approx 300 calories!!
