I have the best Fattoush recipe, if anyone's interested.
• 1 lettuce, washed and chopped
• 1 bunch parsley, chopped.
• 1/2 bunch mint leaves, washed and drained.
• 2-3 cucumbers peeled and sliced.
• 7-8 radishes, sliced.
• 1 medium green pepper, diced.
• 1 medium red pepper diced.
• 1 punch of purslane, washed and drained.
• 1 medium onion, thinly sliced.
• 2 green onions, chopped.
• 2-3 cloves garlic crushed.
• 1/4 cup pomegranate syrup.
• 1/2 cup lemon juice.
• 2/3 cup olive oil,
• 1/2 teaspoon paprika.
• 1-2 tbs sumac.
• salt to taste,
• 2 pita breads, cut into squares and fried and toasted (I just put them in the oven, I don't fry them).
Combine all of the above mentioned vegetables except the garlic in a large salad bowl. blend together the pomegranate syrup, lemon juice, oil, sumac, salt and garlic. pour the sauce over the vegetables and mix thoroughly. Top with the pita bread and serve immediately

Cool, that sounds really good. I love to use pomegranate syrup in marinades but I've never used it in salad dressings0

Yum! I've never seen purslane here but google tells me I can substitute rocket.0
-
yeah, you can use rocket leaves. we usually eat rocket with grated parmesan, walnuts and balsamic vinegar.0

Me too, but with almond instead of walnuts (I'm allergic). See, all about the substitutions0 -
