Quick/Easy dinner recipes

My work week is super hectic and the last thing I want to do when I come home from work is cook an extravagant meal. Does anyone have an yummy healthy simple dinner recipes to share?

    Hi:
    I cooked my favorite meals on sunday afternoon, always 2 different ones (A and B).Each Recipe is for 6-8 portions. I separate portions in glass snapware containers with labels and put them in fridge. I can have Meal A for Lunch at the office and Meal B for dinner at home. I only need 2 minutes in the microwave and it is ready.

    I do this, but I freeze them so I have months and months worth of meals at my fingertips.
    Also, keep a few ingredients for easy meals on hand. Like, we like pita pizzas - we keep lower calorie pitas, marinara, part skim mozz, and toppings (peppers, onion, mushroom, spinach) on hand. Or we like to eat stir fry - I keep frozen stir fry mix plus (batch) cooked chicken, ginger, garlic, and Asian sauces on hand. Same with egg meals - we keep the same veggies available and can use them to scramble with eggs and some cheese for easy scrambles or omelettes.

    My dinners normally take about 30 minutes or less to prepare (sometimes cooking time is longer than that, but it doesn't take any effort to sit on the couch while food is in the oven). This week we're having sloppy joes, Italian beefs, and tacos (it's a good week for red meat, I guess). Other typical dinners include baked pork chops with brown rice with black beans and some type of vegetable, spaghetti, shrimp or chicken Alfredo, chili, lasagna, grilled or baked chicken breast with a sweet potato, chicken club sandwiches, taco salad....

    If 30 minutes is an extravagant meal to you, I was likely no help.

    Get yourself a crockpot.

    Throw in boneless/skinless chicken breast. Sprinkle with taco seasoning, dump in a jar of salsa. When you come home from work you have nice spicy chicken for tacos, burritos, or taco salad.

    Look up foil packet dinners. These are great when you don't want to heat up the house. Start with lean meat add veggies, and seasoning. Cook on the grill, usually 8-10 minutes per side. You make individual packets, great when one person likes onion, one person hates mushrooms, etc.

    Stir fries are really quick. I marinate the meat while I'm at work. In a saucepan, start the water for rice. Toss meat in a hot non-stick frying pan. Add veggies (a little oil) and stir. Top with sauce. Make your own sauces for lower sodium. Typically broth, corn starch, and seasonings.....soy, ginger, garlic, etc.

    Thanks for the good ideas! I will use crockpot chicken taco idea! I also looked into the foil packet dinners and love the idea. Thanks again

    tonight i cut chicken breasts into tiny chunks. i saute'd them over med. heat in olive oil with a bit of onion and garlic. then i steamed some broccoli and added the cooked broccoli. then i added a little teriyaki sauce over the top. dinner done!
