Forgive me the stupid question but I am genuinely clueless about this.

Depends on how you look at it. If you've set your macro for protein as 50% of your calories, then the total number of grams of protein MFP recommends changes based on how many total calories it's recommending you eat that day (if it increases your calorie goal due to you logging exercises).0

If you're using the same calorie goals and the same percentages and your macro goals are varying every day (by more than rounding errors), it sounds like a bug to me.0

Your macros vary due to you logging exercises, as WBB55 wrote. Example:
Your goal calories are 2000. Your protein macro is 25%, or 500 calories, or 125 grams (1g protein=4 calories.)
You log 200 calories of exercise. Now your goal calories are 2200, your protein macro is still 25% but that now is 550 calories, or 137.5 grams.0
