Good King Henry

Blitum bonus-henricus. Also known as Poor Man's Asparagus, Fat Hen or Lincolnshire Spinach. It's a member of the Goosefoot family, and a Eurasian relative of quinoa.

I started growing this in the spring and it's become a green leafy addition to soups, stews, eggs and stir-frys. I stumped the MFP database, which had no listing for it. After a bit of digging I've added Henry to the database.

Is anyone else growing or using this delightful vegetable? I'd love to hear any feedback to improve the entry. If you have better, more complete nutritional info, or can offer corrections to the entry, please let me know. Also recipe ideas!

    Raw, it's slightly bitter and should not be eaten in large quantities but can add complexity to a salad. Boiled it's like spinach but a bit stronger and sharper. I've not tried the shoots or flowers yet because my patch isn't mature enough.
