Here is a powerful nutrient dense recipe for quick and easy protein bars/ balls:
1/2 cup raw almonds
1/2 cup raw pumpkin seeds
1/2 cup sunflower seeds
1/4 cup unsweetened organic coconut shreds
3 tablespoons organic ground flax or chia seeds
3 tablespoons natural cocoa powder
8 or 9 soft pitted medjool dates
water as needed
In a food processor combine all the dry ingredients ( nuts, seeds, cocoa, and coconut) until finely ground. Add in the pitted medjool dates and process until well combined. the mixture should come together and stick when pressed together. If the mixture seems a bit dry add a tablespoon of water and continue to blend. When mixture is soft press in to pan lined with parchment or plastic and refrigerate for 2 hours or freeze for half an hour until firm then cut into desired pieces. Alternatively you can just roll them into balls and chill for an easy grab'n go treat. These protein treats are all natural and sugar free, filled with antioxidants, fiber, and healthy fats including omega 3 fats from the flax and chia seeds.
