Perfect Fried Rice

Made the Best Fried Rice I have ever made last night. By accident.

Couple of days ago, I made long grain white rice. 1 Cup Rice. 2 Cups Water. I undercooked it. It was a little al dente. The next day I added some packaged Fried Rice Seasoning, Cilantro, Green Onions and shredded Carrots. Heated it up in the microwave. Still al dente and too moist.

Last night, I was getting ready to toss the whole concoction in the trash, but decided to tweak it again. I put a cast iron skillet in the oven at 500 Degrees. About 5 minutes.

Then I threw the leftover rice into the pan and threw it back in the oven for 15 minutes.

When I took it out, it was hot and had the perfect consistency. No longer al dente and, as an added bonus, the rice that was in contact with the hot cast iron pan was crispy and added a great texture to the rice.

    love my casy iron pan! that crispy rice sounds interesting. Will definitely give it a try. I cook London Broil like that,heat the pan first.

    Over the last couple of years, I have replaced almost all my pots and pans with Cast Iron.
