Life of a Type 1
After my early protein waffle (can those words even co-exist) bfst, I worked for 6 hrs straight (it's summer people and I'm a teacher, don't judge) so I came home and made myself a lazy lunch, meaning I took my sweet time to make it nice.

Color Quiche (see pics for ingredients)

I made this treat in the pan. First sautéed my veggies in a non stick pan sprayed with cooking spray. While that happened, I beat 4 egg whites with the parmesan cheese and bread crumbs (just a little for texture ). Then I sprinkled the feta on, poured the batter on and let it heat through.
On busy days, when I don't have time for it to be pretty and set up, I just do a big scramble. Tastes the same, saves time.
2 great meals today I don't get or have time for during the on season. Treat yourself when you can.

I finished the day with a sunset yoga session with friends on the beach, right after a tough boot camp at the studio. Why? Because a friend had a need and I love her (not because I'm crazy workout girl, One 30 min good daily sweat 3-5×wk is all ya need). Yep, east coast still has amazing sunsets. Amazing people. Amazing blessings. Look for them.
