Makes 24 muffins

14 Ingredients Edit Recipe

• 4.50 tsp, Baking Powder (Aluminum Free)
• 1.50 tsp, Ground Cinnamon
• 1.50 tsp, Ground Ginger
• 0.75 tsp, Ground Nutmeg
• 0.75 tsp, Fine Sea Salt
• 6.00 teaspoon, Pure Vanilla Extract
• 6.00 egg, Whole Egg
• 1.50 Cup, Great Value Whole Blueberries
• 2.00 Cup, Whole Grain Oat Flour
• 4.00 tablespoon, Oil - Vegetable, almond
• 6.00 tsp, Stevia - Powder
• 4.00 scoops (34g), Vanilla Spirutein
• 4.00 Level Scoop, Whey Protein Powder Vanilla Flavor
• 16.00 fl oz, 100 % Pure Apple Juice

Preheat oven at 375 deg

Combine all dry ingredients in large bowl and whisk until blended together.

Combine all wed ingredients in medium size bowl and whisk until blended.

Combine wet ingredients with dry and whisk until smooth. If consistency is too thick, add water until at desired thickness.

Spray muffin tins prior to pouring half full with the batter. Add a few blueberries, then add the rest of the batter, and add more blueberries.
Bake for 20-30 min. or until tops are lightly browned.

Tip: Sometimes I add a little Almond milk and water to thin the batter, but keep the carbohydrates low, so the macronutrients are in the "Zone".
