Sweet potatoes, rosemary, garlic, onion, coconut oil
One of my own regular staples that I thought I'd share with you as it's delicious!
These are the measurements for a single serving of 184 calories - I serve this a side dish but you could easily up the quantities and make as a main meal.
Cut the sweet potato into chunks and boil for 8 minutes, then drain and toss into a roasting tray with the coconut oil, chopped onion, sliced garlic cloves, and sprigs of rosemary (dried will do).
Pop in the oven at 200 degrees and roast for about 30 minutes until the sweet potato is tender - take it out and give it a shake to distribute the oil a few times.

Could the step of boiling the potato be skipped and just roast the potato longer?0

Yes, definitely
I find par boiling them just makes it quicker for me to get it on the table after a long day at work. I would add more oil if roasting for longer though (extra virgin olive oil is my usual favourite)
