Vegetarian Lebanese Bulgur/Cracked wheat recipe

An easy recipe to cook bulgur (it's cracked wheat) which is very high in magnesium, iron, protein and dietary fiber (recipe for two). Cooking time 20 minutes.
1 small onion chopped finely
2 medium tomatoes diced finely.
0.5 cup bulgur (cracked wheat)
2 tablespoon olive oil
2 tablespoon tomato paste
1 tablespoon sweet pepper paste
Salt to taste
half a teaspoon paprika
Fry the onions in the olive oil until golden. Add the bulgur and tomatoes and stir. Add approx 1.5 cups water, the tomato and pepper paste, salt and paprika and stir. Bring to a boil until the water is absorbed in medium heat. Let it cool before serving.
I serve this with yogourt, mixed with 2 cucumbers, olive oil and chopped fresh mint leaves.
