Mixed fish and sweet potato cakes in polenta 271cal

Salmon, cod, smoked haddock and sweet potato fish cakes in polenta
Easy to make, taste divine, makes 4 good sized fish cakes each with only 271 calories.

Chop the sweet potato into chunks and boil until tender, then mash (add pepper but nothing else), allow to cool slightly.
Steam the fish for about 8 minutes, allow to cool for a few minutes.
Flake the fish into fairly decent size flakes and put in a large bowl.
Add the mashed sweet potatoes and black pepper to the cooked fish in the bowl. Add parsley and salt if you wish.
Mix together and divide into 4 portions then shape them into patties with your hands (about 2cm high by 10cm across).
Put the polenta in an even layer on a plate and dip each side of each fish cake into it.
Heat a frying pan on the stove and melt the coconut oil then fry the fish cakes for about 3/4 minutes each side. Don't turn them too soon or they'll stick! The ingredients are already cooked so you're just warming them through.
These are delicious cold in a packed lunch too, smaller ones are better finger food though.
Serve with a side salad and lemon yoghurt dressing (or dip).
