Anybody have any great meals they like to make that is healthy delicious and easy on the pocketbook? Id love to hear and share recipes.

    Oh, I clicked b/c I thought you were asking about meals that didn't need to be refrigerated, and were compact (like, literally could fit into a pocket if you had to).
    Well, 3/4 cup of brown rice with a pouch of tuna or salmon and some butter or small amount of bbq sauce is yummy, healthy, and not expensive.
    Brussels sprouts with ground chicken and lemon pepper.
    Tortilla wrap w/ turkey lunchmeat, veggies and hummus.
    Beans. Beans are cheap and healthy.

    I love to make open Spicy California rolls.
    I cup of rice
    1/2 cup of imitation crab meat chopped up with 1 Tbsp of mayo and to make it spicy I put in 1 Tbsp of siracha (i do this in a food processor
    1/2 cucumber chunks or sticks (i marinade them the night before in rice vinegar and it is awesome)
    1/2 an avocado
    and if your feeling fancy some broken up Nori on top of the Rice.

    I estimated the meal to be around $3-$4 a plate assuming you have things like a bottle of siracha, mayo, rice vinegar laying around. Which are all great things to keep in the pantry :]

    One of my favorite meal is stuffed tomatoes instead of using hamburger meat you lean turkey me or ground chicken seasonings and some onion. And bake it
