All nutritional info seems to show grams of fat and how much of that is saturated but hardly any indicate poly or mono. Im trying to bring my poky and mono fats up and sats down. Can I assume that if for example I've eaten 25 grams of fat but only 10 of these are sats that the rest is mono or poly??

Unless it contains trans fats, the fats will be listed as mono, poly or saturated. :)

They say that sat fats should be <7% of calories for the average person.

This is a very basic, but very cute, explanation of fats. It focuses a bit on cooking because it's from a cooking show, but it's good. Might even help you stop googling confused.com. ;)

After cooking, I'll drizzle some extra virgin olive oil on my food to add the good fats to my diet

    Yes.

Goal (Poly + Mono + Trans + Saturated) = Goal (Total Fat)
    ...rearranging...
Goal (Poly + Mono) = Goal (Total Fat - Saturated - Trans)
    ...since Goal (Trans) = 0
Goal (Poly + Mono) = Goal (Total Fat - Saturated)

Just plug your daily goals for Total Fat and Saturated into the above equation to find your daily goal of Poly Fat plus Mono Fat.
