I am addicted to tomato soup.
My newest (low calorie) version is to use canned diced tomatoes, some broth, basil, salt to taste,carrots and onions, cook them 3-4 hours in the slow cooker and then strain them through a sieve or cloth. It is more like a flavorful tomato broth.

Does anyone have any good tomato soup recipes or tips?

    cup Tomatoes , canned whole

    cup chicken broth

    tbsp lime juice

    cup spinach, chopped a bit


    Recipe Directions for low fat/low cal EASY homemade tomato soup
    1.chop onion. add to pot and fry 3-4 mins. add mushrooms. add shake or two of ground cumin, pepper and salt to taste. fry another 2 min. add splash of broth if is sticking. (or use non-stick pan). add diced carrot, cook another 3-5 mins. crush tomato with potato masher (or blender for thicker soup) and add plus equal amount water and rest of chicken broth.


    2.adjust salt and pepper, add some chili pepper flakes, dried cilantro, paprika... whatever you want. cook another 15 min or so and then toss in shrimp and spinach.


    3.can add corn, black beans... would be great with chicken and avocado and fresh cilantro.

    I usually just throw a can of diced tomatoes into a vegetable soup to give it flavor. So delicious. Do you think your soup needs to be strained? I may try it this weekend.

    Ooo, I like the idea of adding tomatoes to soup. I'll probably use pico de gallo instead of canned tomatoes.

    In a saucepan sauté onion, garlic, tomato and chilli. Add water and simmer before adding tomato puree and salt and pepper seasoning. When boiling add evaporated milk (I use Carnation) and bring to the boil again before serving. Garnish with chopped shallots.

    This is worked out on 8 servings.

    currently have a soup going in the crock pot
    2 cans of diced tomatoes (one no salt added, one italian flavored)
    2 tbsp of tomato paste
    4 c veggie stock
    1/2 onion
    1/3 green pepper
    1 hot pepper
    1 clove garlic
    1 c canned green beans
    1/4 c quinoa
    1/4 c lentils
    1 c spinach
    about 3 cups of water and a bunch of spices thrown in.
