Baked Greek Stuffed Chicken,Serves 2

Preheat oven to 350°F
Ingredients:
6 Toothpicks
-2 large boneless chicken breasts
(Marinated night before in 1 can undiluted chicken broth;save broth for later)
-2 pieces pan fried bacon, diced (optional)
-4Tbs. Cream Cheese
-2Tbs. Feta Cheese
-1Tbs. fresh basil
-1Tbs.fresh chives (optional)
-2 stewed tomatoes,diced

Mix everything except chicken breasts in bowl until fairly smooth.
Slice pockets in center side of chicken breasts, careful not to cut all the way through. Cut them at an upward angle to help the cheese stay in.
Stuff with cheese mix. Do not overstuff, you will use any extra cheese mix. Pin shut with toothpicks, using three per breast
Pour chicken broth in 8x8 pan
Place breasts in pan and cook for 45 minutes or until cooked thoroughly. Add remaining cheese over top of breasts in final minutes of cooking.
