This is one of my favorites
Stuffed Pepper Soup
1/2 pound ground round 2 cups chopped green bell pepper 1 cup chopped onion 1/4 teaspoon black pepper 1 (14-ounce) can less-sodium beef broth 1 (14.5-ounce) can diced tomatoes, undrained 1 (10 3/4-ounce) can tomato soup, undiluted 1 1/2 cups hot cooked white rice
Heat a small Dutch oven over medium-high heat. Add beef; cook 3 minutes or until browned, stirring to crumble. Add chopped green bell pepper and onion; cook 8 minutes or until vegetables are tender. Stir in black pepper, less-sodium beef broth, diced tomatoes, and tomato soup; bring to a boil. Reduce heat, and simmer 45 minutes.
Spoon 1/4 cup hot cooked white rice into each of 6 bowls; top with 1 cup soup.
*Variations: for tomato soup I use Amy's or Progresso - Campbell's too sweet (IMO). I also like to add some basil. You can use brown rice. A red & green pepper combo is nice.
This is from Cooking Light ..... their website is a great place for lower cal recipes.0 -
I use Allrecipes.com - you can search for any recipe by food, etc. they have awesome low fat options. One of my faces- I alter it to be low fat :
Ingredients
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)
Directions
1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
Notes
I pre-cooked my chicken. Sauteed it with the Onion and also added 3 cloves of fresh chopped garlic. I added 1 tsp. (maybe more) of ground cumin and garlic salt.
YUM!!! It's SO GOOD0
