Am I doing something wrong?

I've recently decided to go back to being a vegetarian, and am slowly weaning myself off meat. I mostly eat turkey, pork, and fish now, but I am concerned that I'm not preparing my meals in the healthiest way. I don't have the patience for the broiler, so I usually grill (or what I call grilling) my pork chops and salmon filets in a tablespoon of EVOO. I drain everything on paper towels before eating, but I still wonder if I need to change things up. Am I preparing these foods in an unhealthy way?

    I think grilling with a little, healthy EVOO is the BEST way to prepare meat!

    When I say "grill", I mean that I put it all in a skillet. Is this grilling, or pan-frying? I don't use breading or flour, but I am concerned that i may be doing it incorrectly.

    I would call that pan frying. I'd also use less oil. You might also see about getting a George Foreman grill or something like it. I used to use one a lot, and it keeps things pretty moist, and you don't need oil.

    I have a George Foreman sitting in my study. Why I didn't think of using it is beyond me, haha. Thanks!

    Your methodology is good, what you're doing as someone else mentioned is pan frying. You should probably be using a tbsp or less.

    I tend to use a spritzer to add oil, each spray is... (at least on mine) about 1/16 of a tsp and one spray each side is usually enough to get it to brown a bit and not stick.
