Looking for some ideas for lunches. Last night I cooked chicken breasts in the crockpot with salsa and today I'm cooking rice and broccoli and I'm putting them in portion controlled containers for quick lunches so I have something healthy when I'm really hungry or just lazy.
Any other ideas for what to cook?

I bring leftovers from dinner. It's the easiest thing I can think of that still provides a lot of variety.

I just saw this the other day that seemed like a great idea - A person got ziploc bags, put a chicken breast in each one, and then added a marinade. Anything from olive oil, garlic, and salt to pesto to soy sauce based. Then they sealed and froze, and then would just thaw one out to make for a meal the next day (more chicken breasts for more people).

It seems a really easy and quick way to get a tasty meal - just serve with rice or potatoes or something.

I like to make beef or venison stew to put into single portion containers. Chicken curry with brown rice is also very good.
