    Oh! And guacamole! You can get these little 100 calorie packs that are delicious.

    I just turned off my dehydrator after turning roughly 1.5 lbs of zucchini into crispy Parmesan zucchini chips!
    RECIPE:
    1.5 lbs zucchini, sliced 1/8" thick
    1Tbsp natural sea salt
    1/2c nutritional yeast flakes
    1/2c fresh fine-grated Parmesan cheese
    1c unsalted saltine cracker crumbs (fine)
    1/3c EVOO

    1) Spead zucchini slices on dehydrator trays and lightly salt the tops. Let sit for 20 minutes, then pat both sides dry with paper towel. Transfer 'dry' slices into a large mixing bowl. **This pulls extra moisture out of the zucchini, cutting down on cooking time. Salt comes off with the liquid.
    2) Lightly coat slices with EVOO - you may not need the full 1/3c, that's just my guess on how much is used.
    3) Mix the Parmesan, nutritional yeast, and cracker crumbs. Firmly press the coated slices into this mix, shake off excess, and lay on your dehydrator trays.
    4) Start checking for crispness after 3 hours - mine took 4.5-5, but my dehydrator only has 2 settings: ON and OFF..
