Veggie Gumbo
I was playing around with some frozen veggies and rice yesterday and this is what I can up with It's been a pretty great lunch so far and is really easy to make. Hope you all like it as much as I do!
Ingredients
1 cup rice, cooked
1 can cream of mushroom soup
1 small can mushroom pieces and stems
1 box Green Giant Steamers Antioxidant Blend
1 Tbsp black pepper
Dash salt
Dash garlic salt/powder
2 tsp paprika
Instructions
Cook rice in a medium saucepan and then transfer it to a bowl.
Add cream of mushroom and mushroom bits to saucepan, until boiling. Set aside.
Microwave Antioxidant Blend. Remove from package and add to rice. Pour mushroom soup over mixture and stir well. Add in spices and season to taste.
Serving Size: 3 1-cup servings
Calories: 289 Carbs: 57g Fat: 4g Protein: 7g
