    That's an awesome amount of protein but I think I'd have to gag my way through eating that. Whole eggs would taste better, and I'm not sure how the coconut water fits into the equation... or what effect it would have on taste? Or am I completely misunderstanding and maybe you're just drinking it on the side?

    Switch to whole eggs, add some cheese and more flavorful veggies, and some of that salsa you have there and that would be tasty.

    That was basically my breakfast--2 eggs, 110 g broccoli, cup of spinach, 10 g feta, 25 g mushrooms, about 240 calories. Only 20 g of protein, but that's okay given the rest of the day. Delicious.

    But where's the cheese?? I only use eggwhites in some recipes so that I can add more cheese.

    I don't understand it either, egg whites are basically just slime, the yolk is the tasty, nutritious bit. If the hens who worked so hard to lay those eggs knew that the yolks were being abandoned I'm sure a few feathers would be ruffled.

    Nothing against egg yolks but when you have a hefty day ahead (or when you are simply craving an egg white omelette) there is nothing wrong with excluding the yolk to save calories.

    I just pray there was some garlic, pepper, and salt added. MFP'ers are notorious at under seasoning and for the lack of condiments. Luckily, I approve of your use of salsa :D

    Now I want spinach...better buy some tomorrow. That's a whole cup of egg whites?? Wow, I had no idea egg whites were so low cal. How many eggs did that take? I feel like it's better to eat the whole egg, but cool! Do you use the yolks later or something? When I've made spinach omelettes I've usually only had a half cup of spinach per egg. That's a lot of protein, I'm going to remember this for sure. thanks for sharing!

    One cup of egg whites is only 200 calories. You can make egg white yourself by separating yolk or just buy egg white in a carton. Like some above whined about "rather eating the whole egg", egg whites tastes very close to whole eggs but, of course, do not have the nutrients of the yolk.

    I make an omelette with three egg whites, one full egg, tons of spinach, bit of asiago cheese or parmesean. Yum.

    I keep several packs of frozen veggies on hand. When I need a quick meal, I'll saute the veggies in some olive oil until they're good and warm, then throw in some eggs/egg whites. Good stuff.
