Help with Leaky Gut Syndrome??

I just went to the Healthfood Store in an attempt to find a vegan protein powder to add to my smoothies for breakfast. While talking with the gentleman there and telling him about the very numerous food intolerances and my recent bout of chronic hives that lasted since Christmas till after Easter, he told me it sounds like I sounds like I have porous intestines. As he was explaining it I clued in and asked, `Do you mean Leaky Gut?" ha ha A term I have heard of but never really read much about. Just always thought I'm glad I don't have that!
While researching it, I discovered that most of the symptoms seem to apply to me. Going back about 8 years is when all my health problems started.
I feel a whole lot better, less congested but still have fibro and still have low energy though and still have not lost a lot of weight. I desperately want to heal my body so I don't react to everything I eat. I would like to be able to have some cheese once in awhile or have my strawberries and bananas and spinach and coffee again. I think I would stay gluten free though for sure, but I am so restricted in my eating and I fear it will continue to get worse as time goes on.
What other kinds of foods I eat, as I am finding that my list of foods that give me hives seem to be increasing daily even though I am still on an elimination diet. I was told about bone broth but am a loss about how to make that and how often to drink it?

i was recently diagnosed with celiac diseases and since cutting out products that effected me my hunger has decreased tremendously, perhaps because im actually absorbing the nutrients in my food.
Have you seen a dietician? been diagnosed with anything? Are your numerous food intolerances something you've noticed on your own, or have you had tests done by doctors to clarify what exactly is wrong with you?
I like browsing through the MFP message boards from time to time, but lets be real, these people (including me) barely know anything. we are not professionals and while we can share our personal experiences, everybody is going to have different ones, as well as differing opinions. I think, if you can, its time to see a nutritionist to help you determine what you can and cannot eat in order to feel the way you want. if you already did that.... ignore this0 -
Yes after my allergist refused to food test me saying that my 4 month bout of hives was not food related but auto-immune yet nothing showed on tests, I went to a naturopath who took me off gluten, wheat, dairy, and soy. After following this for some time with only a few cheats and monitoring my food intake daily with a food diary, I saw that everytime I ate these foods, my hives, facial, lip and eye swelling returned immediately. I am also off ALL medication due to the hives as they seemed to irritate me as well.
My symptoms were so severe at one point my dr prescribed me an epi pen and I was in the hospital a few times due to facial numbness. I am still on the elimination diet but have been trying to introduce new foods to expand my options and it seems that spinach, eggs, bananas, strawberries, coffee, nutritional yeast among other things are still causing hives.
This morning I had a blueberry, almond milk smoothie with kale in it and my hives worsened immediately. I do believe this issue is what is at the bottom of all of this. The hives started at Christmas and I have been dealing with this ever since. The problem is not determining what I can and cannot eat, my body tells me immediately. The issue is, that although eating mostly whole foods my list of foods I am able to eat is always diminishing NOT expanding. Hence, my belief that although my symptoms are A LOT BETTER they are not going away. I am becoming more intolerant.
In essence I am saying since radically shifting my eating to be clean whole foods (I should say that I am not totally there yet) but compared to where I was 6 months back, I am eating a way better diet.
